  1. This beer cocktail was inspired by my time opening a restaurant in the St Regis in Mexico City. Every Sunday, we saw large families gathering for a meal out and everyone was ordering and drinking beer cocktails: Vampiros, Micheladas, Cubanas and Clamatos. The set up was a glass filled with ice and the mixer and the beer was served on the side. We wanted to create a super fresh version that would make a great sipper. There are two common varieties of wheat beer: WITBIER (Dutch –"white beer") based on the Belgian tradition of using flavourings such as coriander and orange peel whichwas revived by Pierre Celis at the Hoegaarden Brewery and the Celis Brewery in Austin Texas and WEISSBIER (German –"white beer") based on the German tradition of mixing at least 50% wheat to barley malt to make a light coloured top-fermenting beer. Both the Belgian witbier and the German weissbier were termed "white beers" because "wheat" has the same etymological root as "white". Belgian white beers are often made with raw unmalted wheat, as opposed to the malted wheat used in other varieties.Paulaner Hefeweissen Beerto fill1.25ozTequila Reposado1.5ozFresh Grapefruit Juice0.5ozAgave Nectar3dashBitterman's Hopped Grapefruit Bitters1twistGrapefruit1/2 rimPink Sea Salt/Paprika (2:1)1jigger Tequila, GrapefruitJuice and Agave into Tin2add Ice and hard shake3strain over fresh Ice into 1/2 rimmed Glass (Rim is 2:1, Salt:Paprika)4top with Beer5quick stir to combine6dash Bitters and garnish being certain to rub skin side around glass and also release oils into glass
